Named after the family’s dairy farm, this cheese is a classic, old world style Camembert (bloomy rind cheese), also made from unhomogenized whole milk. It is similar to the more familiar Brie cheese. Our Camembert is truly an artisnal product. Ripened, then aged to provide a soft creamy pate that bends at room temperature with robust, dynamic flavors of Normandy but produced right here in the Hudson Valley. This cheese comes in 1/3 lb wheels and is hand-wrapped in a breathable cheese wrapping paper.In bulk, by advance special order only |

This cheese comes in 8oz. logs and has a shelf life of 4-6 weeks depending on the amount of aging one prefers. (we can age longer here by request)
STELLA VALLIS TOMMEAged four to six months, this classic from the French Alps is reproduced here in the Hudson Valley. Our Tomme has a natural, edible rind, which is washed in the early part of its life for the betterment of a combination of yeasts and molds that dominate its surface flora, and guide its nature out of its infancy. The pate is soft through the center and pliant, yielding robust nutty flavors with hints of tropical fruit in the background and upon the finish. A slightly salty note suggests excellent pairings with sweet, wet fruits… like local apples. This Cheese comes pared down from 8lb wheels into ½ lb wedges, (whole wheels can be had by special request) |
