CHASEHOLM CAMEMBERT

Named after the family’s Chaseholm Farm, this cheese is a classic, old world style Camembert (bloomy rind cheese). Our is a truly artisanal product; hand wrought, ripened, then aged tenderly to provide a soft creamy pate that bends at room temperature with dynamic flavors of Normandy, but produced right here in the Hudson Valley.

This cheese comes in ~1/3 lb wheels and is hand-wrapped in a breathable cheese wrapping paper with a 6-8 week shelf life.

CHASEHOLM MOONLIGHT

a chaource style cheese


A slightly aged, bloomy rind cheese whose white rind just conceals the ash exterior beneath; slightly protelyzed with a yet firm chevre style center. This cheese is savory and slightly tart, and with the ash layer beneath the bloom has characteristics of a goat’s milk St Maure.

This cheese comes in breathable paper, in ~8oz. logs, with a shelf life of 5-7 weeks.

STELLA VALLIS

a raw milk tomme style cheese

Aged four to six months, this classic from the French Alps is reproduced here in the Hudson Valley.  Our Tomme has a natural, edible rind, which is washed in the early part of its life for the betterment of a combination of yeasts and molds that dominate its surface flora, and guide its nature out of its infancy.  The pate is soft through the center and pliant, yielding robust nutty flavors with hints of tropical fruit in the background and upon the finish.  A slightly salty note suggests excellent pairings with sweet, wet fruits… like local apples.
This Cheese is available in ~6lb wheels, and pared into ~½ lb wedges, sealed for freshness, and sold by the Lb.
